But what do you do once you have all these berries at home? Here are some delicious and refreshing ways to enjoy strawberries and raspberries with your family at our strawberry and raspberry picking farm in Vaughan.
WAYS TO ENJOY FRESH STRAWBERRIES
SWEET AND SAVOURY STRAWBERRY BRUSCHETTA
It may seem like a strange combination, but aromatic herbs like basil, mint, and cilantro complement the sweet freshness of strawberries. You can make a twist on Italian bruschetta by slicing the strawberries and tossing them with thin slices of basil. You can serve this mixture on toasted baguette slices, and top it off with some balsamic vinegar and olive oil.
BARBECUED STRAWBERRY SUNDAES
To make barbecue strawberry sundaes, scatter out whole strawberries over a large sheet of heavy-duty foil. Sprinkle some lemon or orange zest, and drizzle it with almond liqueur, and barbecue it over medium heat until they are tender. When the fruit cools, serve it over frozen yogurt and top it off with some whipped cream and sprinkles.
GINGER STRAWBERRY PANCAKES
Who doesn’t love a stack of mouth-watering pancakes? A tasty twist on this classic dish is to incorporate some strawberries and ginger. To make strawberry ginger pancakes, all you need to do is whip up some of your favourite batter and add some chopped strawberries and ground ginger to the mix. You’ll have spicy, sweet pancakes that not only taste great but are great for your digestion, too!
SWEET STRAWBERRY VINAIGRETTE
To make a delicious strawberry vinaigrette, you will need a cup of fresh strawberries, 1/4 cup of vinegar, 1/4 cup of oil, one tablespoon of grainy Dijon mustard, a garlic clove, salt and pepper. Blend these together, and blitz them until they are smooth. The combination of ingredients tastes sweet and tart.
COCONUT STRAWBERRY SWIRL POPS
If you want to cool off this summer, you can enjoy these healthy and naturally sweet coconut strawberry popsicles. All you need is coconut milk, ripe strawberries, and stevia. Blend the ingredients and pour the liquid in a popsicle tray and then freeze for a couple of hours.
WAYS TO ENJOY FRESH RASPBERRIES
Raspberry tiramisu is a spin on the classic Italian dessert with the incredible flavour of fresh berries. You’ll need seedless raspberry jam, orange liqueur, mascarpone cheese, whipping cream, sugar, vanilla extract, soft ladyfingers, fresh raspberries, and confectioner’s sugar to serve.
RASPBERRY RICOTTA BUCKLE
A tasty cake that goes great with your afternoon coffee is raspberry ricotta buckle. The base requires ricotta cheese, sugar, eggs, unsalted butter, lemon juice, vanilla extract, lemon zest, flour, baking powder, baking soda, and salt. For the streusel and fruit, you will need flour, sugar, baking powder, cinnamon, unsalted butter and fresh raspberries.
FROSTED RASPBERRY HAND PIES
These yummy pies may look like berry turnovers, but they’re made using pie dough! They’re easy to make and are perfect for carrying to picnics or serving as a treat after dinner. The ingredients are flour, sugar, salt, oil, unsalted butter, cool water, and lemon juice for the dough. To make the fruit filling, you will need fresh raspberries, apple, sugar, egg, water, and sprinkling sugar. Finally, the glaze is made with icing sugar, milk or water, and vanilla extract.
RASPBERRY PEACH FRUIT LEATHER
Fruit Roll-Ups were delicious treats to eat as kids, but they’re not very good for your health. You can easily make your own fruit leather using just a few ingredients: frozen raspberries, frozen peaches, and grated orange zest. To help you ensure accuracy and consistency, you may want to use a Silpat and a kitchen scale.
RASPBERRY JELLY DOUGHNUTS
Doughnuts are amazing, and they’re even better when they’re freshly made at home. This classic recipe will be a hit at your office potluck and will make the whole family get along when served at home. To make the doughnuts, you’ll need milk, instant dry yeast, sugar, eggs, flour, salt, nutmeg, butter, vegetable oil, sugar and cinnamon for the coating, and homemade raspberry jam for the filling!
